Hey guys,
I try to setup manual approval step, but I simply can’t make edit form to be populated with the triggered data.
I see the triggered data, but it just doesn’t populated in Update Record form.
Any ideas how to fix it?

That’s how it’s designed; the original data won’t be displayed in the form.
If you need to view the original data, you can add a detail block, as shown in your screenshot.
