I have a column in my database where all the multiple choice status should be open, I want to do this update with bulk update but seems like I can not?

Also, there is another question I would like to ask that after this issue is fixed, if I already deployed it, do I need to redeploy the entire application every time the official team releases bug fixes or updates? Will I have to redefine all my data tables and fields again, or is there a way to upgrade while preserving my existing data and configurations?
